Indian Vegan Moong Dal (Veg Dal) Recipe

We know that Indian recipes are spicy and tasty. But today we are sharing an Indian but non spicy recipe called vegan dal recipe. This vegetable dal is very tasty but non spicy. It is cooked with a few spices and vegetable. But believe me it,s taste is amazing. It is popularly known as veg dal.

As we know Moong dal is the part of Legumes food group and it is very healthy as well. It is full with protein and minerals.

Ingredients

  • Moong dal 200 grams
  • Carrot 1 piece (cut into small cube size)
  • Cauliflower ½ piece or 2 cups
  • French bean 1 cup (cut into 1-inch size)
  • Snow pea 1 cup
  • 1 piece tomato (finely chopped)
  • Cumin seeds 1 tbsp
  • Ginger paste 1 tbsp
  • Cumin powder 1 tbsp
  • Ground coriander 1 tbsp
  • Red chili powder ½ tbsp
  • Bay leaves 2-3 pieces
  • Sliced green chili 6-7 pieces or as per your taste
  • Dry red chili 2-3 pieces
  • Turmeric powder 2 tbsp
  • Chopped coriander leaves 1/2 cup
  • Cooking oil 3 tbsp
  • Salt to taste

How to cook vegetable Dal

Heat 1 tbsp cooking oil in a saucepan or kadhai over medium flame. Let the oil heat enough then add moong dal and stir fry them until light red.

Pour 1 liter of water and heat over high flame. When the water starts boiling then add salt and turmeric powder. Boil it until the dal cooked well then remove from the kadhai. Keep it aside.

Heat the kadhai again and add 2-3 tbsp cooking oil. Add cumin seeds, bay leaves, and dry red chili. Sauté for 30-40 seconds then add vegetables. Saute them for 2-3 minutes then add salt, turmeric powder, red chili powder, ginger paste, coriander powder, and cumin powder.

Mix well all the spices with vegetables. Sauté the vegetables until they turn light red or up to 5-6 minutes. Now add the dal in the kadhai and mix well. Cook the vegan dal for 10-15 minutes.

Remove it from the kadhai and keep on a pot. Garnish the moong dal with coriander leaves. Serve the vegan dal with roti, plain rice or your favorite dish.
