¾cupSushi Ricecooked
1tbsprice vinegar
1tbspMayonnaise mixed with 1 tsp sriracha
½cucumber cut lengthwise
2Shrimp tempura, cooked
½nori sheet
½Avocado, sliced
For theTopping
½Avocado, thinly sliced
1tspsoy sauce
½tspfish roe
Instructions
Firstly, cook the sushi rice, and mix them with rice vinegar. Prepare the rest of the ingredients.
Place a plastic wrap over the bamboo sheet. Now cut the nori sheet in half and place it on the bamboo sheet.
Scoop two to three tablespoons of sushi rice and spread them over the nori sheet leaving 1/8 inch space on all sides.
Flip the nori sheet so that the rice is now at the bottom of the bamboo sheet. Scoop a tablespoon of sushi rice and spread it evenly on the nori sheet as well.
Drizzle mayonnaise mixed with sriracha on top.
Now place cucumber sticks in the middle of the nori sheet.
Place cooked tempura shrimp on the side of the cucumber.
Place avocado slices on top of the cucumber and shrimp.
Start rolling the sushi by starting to flip the bamboo mat over the ingredients tightly. Make sure you ease out the bamboo mat and the plastic wrap as you continue to fold it tightly until you get a perfectly rolled log of sushi.
Now spread the thinly sliced avocado slices on top of the sushi roll so that it resembles the scales of the dragon. Press the slices to shape them into the log using the bamboo mat. Sprinkle fish roe and drizzle soy sauce on top.
